Vegetable soup

Ingredients:

Preparation:

  1. In a large saucepan, heat the olive oil.
  2. Sauté the onion and leek for 2-3 minutes.
  3. Stir in the garlic, carrot and broccoli.
  4. Pour in the stock and bring to the boil. Boil for approximately 5-6
    minutes or until the vegetables are tender.
  5. Carefully transfer the soup to a liquidiser and blend.
