Sorpotel
Serves: 4 persons
Ingredients:
- 1 Kg Beef or Mutton (boneless)
- ½ Kg Liver
- 3 Green Chilies
- 2" piece Ginger
- 20 flakes Garlic
- 14 Kashmiri Dried Red Chilies
- ¾ tea spoon Pepper Corns
- ¾ tea spoon Cumin seed
- 1 ½ tea spoon Coriander Seeds
- 1" piece Turmeric
- Vinegar, Tamarind & Salt As per taste
- Cooking Oil 2 Table spoon
Preparation:
Boil the meat and Liver in 2 cups of water till it reduces to
one cup (to be kept aside). Remove meat and liver and cut into small pieces. Add
2 table spoons of Cooking Oil and chop very finely the green chilies, ginger,
and garlic and add to the fried meat. Grind to a smooth paste the Kashmiri
chilies, pepper corns, cumin, coriander seeds and turmeric in vinegar. Add this
to the meat and fry well. Finally, add the remaining cup of water in which the
meat was boiled with salt, tamarind and vinegar to taste.
Preparation Time: 15 minutes
Cooking Time: 20 minutes
