Vegetable Kofta
Vegetable Kofta
Serves : 4-6 persons
Ingredients
- 500 gms Potatoes , boiled and mashed
- 250 gms Peas , boiled and mashed
- 1 Turnip ( Shalgam ), boiled and mashed
- 250 gms Carrots , grated
- 6-7 leaves Spinach
- 1 tea spoon Salt
- 7 Green chillies
- 1 tea spoon Red chillies
- 1 tea spoon Cumin seeds ( Zeera ) , roasted
- 1 cup COOKING OIL
- 1 Egg
Preparation
Boil potatoes, peas, and turnip separately and mash them.
Cut the spinach and green chillies freely and grate the carrots.
Mix all the vegetables with salt, red chillies and cumin seeds.
Now make medium size round koftas and dip them in egg mixture.
Fry them in cooking oil. Arrange the koftas in a dish and pour hot gravy on
them.
Gravy Ingredients
- 1 tea spoon Cumin seeds
- 2 tea spoon Garlic paste
- 1 tea spoon Ginger paste
- 4 tea spoon Onion paste
- 250 gms Yogurt
- 1 tea spoon Garam masala
- 1 tea spoon Anise seeds ( Saunf )
- 1 tea spoon Nigella or Onion seeds Kalonji
- 1 tea spoon Fenugreek Seeds ( Methi dana )
- 1 tea spoon Red chillies
- 4-5 Green chillies , sliced
- 1 cup COOKING OIL
Preparation
Heat Cooking Oil in a deep pan and add methi dana.When they become slightly
red, add ginger and garlic paste to it and fry for 3-4 minutes.
Now add all the remaining ingredients.
Keep stirring and sprinkle a little water whilst stirring.
Fry till oil separates from its masala, then add half a cup of water and cook on
a low flame for 20-25 minutes.
Add green chillies to the gravy.
