White keema curry
Ingredients:
- Lamb mince 750 gm
- Almonds 15 gm/1 tbs
- Cardamom powder 2.5 gm/ ½ tsp
- Cashew nuts 15 gm/1 tbs
- Cooking oil 60 ml/4 tbs
- Garlic, chopped 15 gm/1 tbs
- Green chilies, whole 4
- Onions, chopped 80 gm/ 1/3 cup
- Poppy seeds (khus khus) 15 gm/3 tsp
- White pepper powder 5 gm/1 tsp
- Yogurt 240 gm/1 cup
Method:
- Soak and peel almonds. Soak cashew nuts and poppy seeds for an hour and
blend all three with a little water to a finepaste. Heat oil in a kadhai and sauté onions and garlic on low flame without
letting them turn brown. - Add mince and sauté over gentle heat.
- Whisk and add the yogurt, cardamom powder, white pepper powder and whole
green chilies. Simmer gently till mince iscooked and gravy is reduced by half. Pick out and discard the green chilies.
Add the nut paste and stir well. Simmer for2-3 minutes.
- To Serve: Serve hot with paratha.
Meen Moily Fish Curry
Ingredients:
- Pomfret/sole darnes or small whole fresh fish 900 gm
- Cardamoms 2
- Cinnamon 1†stick
- Cloves 2
- Coconut, grated 120 gm/ 1/2 cup
- Coriander, chopped 10 gm/2 tsp
- Fenugreek (methi) seeds 2.5 gm/ 1/2 tsp
- Groundnut oil 80 ml/ 1/3 cup
- Lemon juice 30 ml/2 tbs
- Mustard (sarson) seeds 5 gm/1 tsp
- Oil to fry fish
- Onions, sliced 80 gm/ 1/3 cup
- Red chillies, whole 6
- Salt to taste
- Tamarind (imlee),
- soaked in 1/2 cup water 25 gm/5 tsp
- Tomatoes, chopped 120 gm/ 1/2 cup
- Turmeric (haldi) powder 5 gm/1 tsp
Method:
- Apply lemon juice to fish and leave for half an hour. Then wash with
fresh water, squeeze lightly and pat dry. - Fry the fish lightly in oil and set aside. In a small pot heat 1
tablespoon/15 ml groundnut oil. - Add mustard seeds, fenugreek seeds, cardamoms, cinnamon, cloves, whole
red chillies and sauté lightly then cool. - Blend to a smooth paste in a blender with the grated coconut. Mash the
soaked tamarind with your fingers, then squeeze out and discard the pulp.
Keep the extract aside. - Heat the rest of the groundnut oil in a pot and sauté onions till brown.
Add the tomatoes and turmeric and stir-cook for 4 to 5 minutes. - Add the tamarind extract and bring to boil. Reduce flame and let simmer
for another 5 minutes. - Add coconut paste to the gravy. Cook till gravy thickens.
- Add salt and curry leaves. Gently add the fried fish to the curry and
simmer for 5 minutes. - To Serve: Garnish with fresh coriander leaves and serve hot with boiled
rice or roti.
Taiwanese Fried Rice
Taiwanese Style Fried Rice
Ingredients:
- 10 medium size mushrooms, chopped
- 1 large red bell pepper, thinly sliced
- 3 eggs, or as needed
- 4 pieces of garlic, crushed
- 1 1/2 thumb size pieces of ginger, finely chopped
- 3 spicy red chili peppers cut into thin strips
- 4 “breakfast bowl” size servings of rice (4 cups of rice)
- 1 tin of tuna, drained.
- 4 tablespoons soy sauce
- Coriander (cilantro leaves), 1 handful or as needed
- Oil for Stir-frying, as needed
Preparation:
- Heat the oil in a wok until hot and throw in the mushrooms and bell pepper slices.
- Cook until just done. Next, add the eggs, garlic, ginger and chili peppers, turning the heat down to medium. Stir the eggs until just scrambled and then add the rice and tuna. (The trick with fried rice is to cook the rice a good while before it’s fried).
- Mix the rice and other ingredients around in the wok well. Stir in the soy sauce.
- When well mixed garnish with the coriander and serve. Serves 4.
Serving suggestion: Mix together extra soy sauce, garlic, chili pepper, ginger. Serve in small bowl at the table, that people can then spoon onto the fried rice if they want more of the flavor.
Dark Skin remedies
Home Remedies For Dark Skin
- Take 1 tsp of milk powder with 1 tsp of honey and same of lemon juice.
Add ½ tsp of almond oil. This mixture is to be applied on face and washed
off after 10-15 minutes. You can also apply this pack to other body parts
where you have dark skin. This brings shine to the skin and removes the tan. - Can place the slice of raw potato on the face which helps reducing the
blemishes and other marks. - You can mix oatmeal with curd and tomato juice. Apply this mixture on
the face or at the affected area. Keep it for 15 minutes and then rinse
thoroughly. Do it with cold water which will help you remove the tan and
will also lighten the skin. - Simple application of turmeric powder along with lime juice will remove
the tan. Lime juice is considered as natural bleach. This is also one of the
effective home remedies for dark skin - You can also apply dried orange peels mixed with curd. This also helps
reducing the blemishes and scars. You can also apply this solution to other
parts of the body where the skin is dark. - Take four almonds and soak them overnight. In the morning, grind them
into fine paste using the milk. This pack can be applied wherever you have
the darker skin. This works well especially on the face. The pack should be
applied overnight and rinsed off early in the morning with cold water.
Repeat the procedure and continue for fifteen days for maximum benefits. - One tbsp of gram flour can be mixed with 2 tsp of cow’s milk. About 2-3
drops of lime juice can be added. This gives glory to the skin. This mixture
is to be applied on dark skin and left for 15 minutes before washing off.
The course for this is up to a month. It is a commonly used natural and home
remedy for dark skin.
