Chow Farn - Fried Rice
Chow Farn (Fried Rice)
Note for Muslims: For Halal Foods, change some ingredients.
Serves 4 - 6 Persons
- Long-grain rice, soaked in cold water for
- 225 g (8 oz) 1 1/3 cups 30 minutes and drained
- 450 ml (15 fl oz) 2 cups Water
- 1 1/2 tsp Salt
- 2 Tbs Vegetable oil
- 2 Medium onions, finely chopped
- 225 g (8 oz) Cooked ham, finely chopped
- 2 Tbs Petits pois
- 2 Medium tomatoes, blanched, peeled and quartered
- 225 g (8 oz) Frozen shrimps, thawed and shelled
- 1 Tbs Soy sauce
- 1 Egg, lightly beaten
Put the rice into a saucepan and pour over the water and 1 teaspoon of salt.
Bring to the boil, reduce the heat to low and cover the pan.
Simmer for 15 to 20 minutes, or until the water has been absorbed and the rice
is cooked and tender. Remove from the heat.
Heat the oil in a large saucepan. Add the onions and fry until they are soft.
Stir in the ham, petits pois, tomatoes, shrimps and remaining salt and cook for
1 minute, stirring constantly. Stir in the cooked rice and cook for 2 minutes,
stirring constantly. Add the soy sauce and egg and cook for 2 minutes, stirring
constantly.
Transfer the mixture to a warmed serving dish and serve at once.
